But this is a good thing. Instead of continually buying more meats and just throwing it into the freezer, we&#8217;re eating everything. Like a few days ago, I made him liver and onions. Note I said \u201chim\u201d as I didn&#8217;t touch it. Cleaning and cooking it was enough for me!<\/p>\n<p>But anyhow. Last night I thawed out 2.5 pounds of hamburger meat thinking I&#8217;d make something with it. Instead we ended up going to our favorite new pizza place, Corrina&#8217;s, and picked up a few subs. So tonight, it&#8217;s all about that hamburger meat. And without a grill, what better way to utilize it than meatloaf?<\/p>\n<p>As always, I use basic recipes online to make sure I&#8217;m cooking at the right temp, etc, but this recipe is totally made up as I go. Cuz that&#8217;s how I roll!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>mmmmmMeatloaf<\/strong><\/span><br \/>\n1 medium onion, diced<br \/>\n2-3 garlic cloves, minced<br \/>\n2 eggs<br \/>\n1 cup seasoned breadcrumbs<br \/>\nheavy shaking of desired spices &#8211; I used chili powder, pepper, and Lawry&#8217;s seasoning<br \/>\n2.5lbs hamburger meat<br \/>\n1 cup BBQ sauce<br \/>\n2 slices cheese<br \/>\n1 cup ketchup<\/p>\n<p>Preheat oven to 350*<\/p>\n<p><a href=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/ingredients.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1406\" title=\"ingredients\" src=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/ingredients-275x300.jpg\" alt=\"Meatloaf Ingredients | BeccaBlogs.com\" width=\"275\" height=\"300\" srcset=\"http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/ingredients-275x300.jpg 275w, http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/ingredients.jpg 396w\" sizes=\"auto, (max-width: 275px) 100vw, 275px\" \/><\/a><\/p>\n<p>Mix everything together in a large bowl except for the ketchup and cheese until all ingredients are well distributed throughout the meat.<\/p>\n<p>Still in the bowl, split the mixture into 4 roughly equal sizes.<\/p>\n<p>Place 1\/4 of the mixture into each of 2 loaf pans. You can also make these on a large baking pan free form. In that case, mush 1\/4 of the mixture into 2 loaf shapes.<\/p>\n<p><a href=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/noketchup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1408\" title=\"noketchup\" src=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/noketchup-300x234.jpg\" alt=\"Meatloaf Loaves | BeccaBlogs.com\" width=\"300\" height=\"234\" srcset=\"http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/noketchup-300x234.jpg 300w, http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/noketchup.jpg 432w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Cut the slices of cheese into halves and place 2 halves on top of each loaf.<\/p>\n<p>Place the remaining 1\/4 of the mixture atop each of the loaves and pinch together with the bottom so the cheese doesn&#8217;t spill out during cooking.<\/p>\n<p>Top each loaf with ketchup. Place in the center of the oven and cook for 75 minutes or until center of each loaf is fully cooked.<\/p>\n<p><a href=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/ketchup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1407\" title=\"ketchup\" src=\"http:\/\/fletcherfam.com\/bb\/wp-content\/uploads\/2011\/04\/ketchup-300x225.jpg\" alt=\"Meatloaf Loaves | BeccaBlogs.com\" width=\"300\" height=\"225\" srcset=\"http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/ketchup-300x225.jpg 300w, http:\/\/beccablogs.com\/wp-content\/uploads\/2011\/04\/ketchup.jpg 432w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Let sit in pan for about 5 minutes.
