Dying Contacts List, Must Resuscitate

My phone and Gmail account seem to be conspiring against me. They keep deleting my contacts. I’m talking about my husband, my parents, my best friends… Ya know, the people I text with on a frequent basis.

It’s bugging the ever loving frell outta me! Seriously.

Every time I open my messages, I see more phone numbers and less names associated with them. The only way I know who they are is based on what we’ve been discussing.

And lemme tell ya, when you text with about 20 or so folks on a regular basis, that’s no easy feat! Also, it’s taking emails and all the other info with it when it goes POOF.

I have sent this to the 100 or so people remaining in my Gmail Contacts list and posted it on Facebook and Twitter, but I figured I’d post here as well. The easiest way to get my peeps back, is for y’all to give me your current info directly.

This form will send the contact info directly to me and no one else will see it. So no worries there with regards to privacy, k?

Foster Kids Heart Gallery Pictures

Adoption Progress through the Foster System

Saturday night at a friends birthday bash, we spoke to one of her co-workers that specializes in placing foster children into homes. SCORE! Unfortunately she only works in Broward county, but we were still able to get some great info. Seeing as we aren’t certain what state we will be living in, we aren’t planning on starting anything in the next couple of months.

She said the home study and other approval processes can take anywhere from 4-9 months. Considering we want a sibling group of 2, we would likely receive placement quicker than parents wanting a single child. Sibling groups fall into the “Special Needs” groups as they don’t want to be split up and can often be more difficult to place.

She offered to be our contact if we ever needed any help even after we move. I love nice people. They’re completely awesome!

Also, every state has different benefits for their children. Florida offers Medicaid for the children until the age of either 18 or 21 depending on circumstances, free college tuition up to age 28 (though maybe it’s age 23; it was loud in the bar) to any public FL university, community college or vocational school, as much therapy as the children (and family) requires, and a great support system. I had to look some of that stuff up on AdoptFlorida.org.

Texas offers the right to inherit (from both adoptive parents and birth parents), adoption reimbursement fees, Medicaid coverage up to age 18 or 21 again depending, counseling/ therapy/ other services for the children (and family), state college tuition assistance. All this (and more) came from the Texas DFPS website.

Baking Biscuits with Modifications

Everyone that knows me or reads my blog knows I am a huge fan of baking and cooking. I’m usually pretty good about following recipes… unless I’m missing ingredients like those amazing peanut butter cupcakes I made several months ago.

Today is my younger brother’s birthday bash and my contribution is biscuits. I made them for Thanksgiving and they were a huge hit. Well, I was under the impression that I had plenty of ingredients. I started off doubling the dry items in the KitchenAid and when I went to grab my single stick of butter, I realized my mistake. All my years of baking and today I totally forgot that it takes 2 sticks to equal 1 cup. Dammit. (I was tripling the recipe and thus needed a full cup.)

So I started Googling and crossing my fingers that oil was an acceptable substitute. As is, I was already using butter instead of shortening (lard/Crisco) and they were perfect. Turns out that, yes, oil is a perfectly acceptable substitute in biscuits, but I had to modify the other wet items.

Which I did. And they were totally delicious! Perfect, slightly dense, and super yummy. Although next time, I’m adding some baking soda as well bc they resemble little rocks and aren’t big and fluffy.

Without further ado… the recipe with my modifications in green:

J.P.’s Big Daddy Biscuits from AllRecipes.com
Prep Time: 30 Min (not even 15 minutes by my watch)
Cook Time: 15 Min (see below)
Ready In: 45 Min
Servings: 6 huge biscuits (or 10-12 small biscuits)

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1/3 cup shortening (or unsalted butter or 1/3 cup vegetable oil)
  • 1 cup milk (if using oil, max out at 2/3 cup)
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Cut in the shortening until the mixture resembles coarse meal. (I dumped the oil straight in and used the paddle attachment until it resembled coarse meal.)
  4. Gradually stir in milk until dough pulls away from the side of the bowl. (This took less than the full amount. With the dough hook attachment, I drizzle in about half and then slowly added the rest every 30 seconds or so.)
  5. Turn out onto a floured surface, and knead 15 to 20 times. (Or leave in the KitchenAid and keep using the dough hook for about another minute until it forms a ball.)
  6. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet. (I pull off roughly equal sizes chunks, roll into little balls and place with all sides touching in a baking dish lined with parchment paper.)
  7. Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown. (For my oven this takes about 18 minutes, then I turn the oven off and let it sit for another 5-6 minutes.)

Back from Vacay! …and my Internet Hiatus

Hello my bloggie friends!

It’s been a long time since my last post due to my being on vacation in the West Virginia mountains and having truly horrific internet access. In truth, the best access was from my iPhone and even that was spotty. The motel’s wifi was too far from our room to have decent access. Yes, motel. with about 35 rooms and the only one in the town. And when we drove up to another little town, there was absolutely no data towers to be seen so I didn’t even have my iPhone. I couldn’t even use AroundMe to find restaurants. OK, the town was so small that the “old fashioned” way of just driving around worked.

For someone as connected as I am, this was horrible! Seriously, it was like going through a pretty major withdrawl.

I did keep up with my FourSquare check-in’s so folks knew where we were, and even became the Mayor of several businesses up there. But overall, it was horrible for my social media obsessiveness. As part of my 101 in 1001 list, I did say I would be without Facebook and Twitter for our week away, but it wasn’t so easy. I kept my promise to myself to not check any of my feeds, so I actually feel like I accomplished a true social media vacation.

I brought my knitting – 2 projects actually – and only managed to work on 1 of them in the hotel. All 4 of our plane rides were like being squashed into sardine cans with no extra arm room to knit.

I promise to post a recap of our trip soon. It was beautiful country and I have lots of pictures, but there was so very little to do that much of our time was spent visiting with friends and family, driving around and sleeping. Yeah, we slept a lot. On ridiculously bad beds. But alas, that’s for another post…

Sick, Again…

So 4 months ago, I had pneumonia, and it was no fun. I spent weeks feeling run down, and finally a physical symptom basically forced me to go to the ER. $8000+ later, I was officially diagnosed and given even more drugs.

Fast forward to now when I’ve been feeling run down and just crappy for roughly a week. This time my fever has spiked to 101.7* then pops back down to normal [for me] of about 98* and back and forth every couple of days. I get dizzy and sweaty and, well, it ain’t pretty. I am also really worried that I might have pneumonia again. I keep feeling my throat lymph nodes to make sure they’re not swollen bc I have a history of tonsillitis as well. Oh yeah, I’m a mess.

One thing I’m doing differently is taking my vitamins every single day including an extra folic acid pill. I don’t get nearly enough exercise as I should. My appetite is still pretty crappy (always has been) so I don’t eat that differently than before. My water intake lately is pretty high, but this morning I woke up with a severely dry throat, mouth and especially soft palette which really frickin hurt! With all the sleep I’ve been getting, drinking has been low on the priority list except to take meds with.

Yeah, yesterday (Saturday) we went to Walmart (I waited in the car), then to Sonic for an early dinner (yum!), then to Michael’s for some art supplies. I actually went in, wandered about for a few minutes, then found a table and chairs and sat there sweating and sleeping. It was really no fun. We got home around 8pm and I vaguely remember taking my shoes off. The next thing I remember was it being 1am. I got up, took more medicine, changed outta my jeans and fell back to sleep with Lola curled up right by my side. Up again at noon for more meds. Then up again at 6pm for more meds, to take a shower and try not to fall back asleep.

Needless to say, it’s been a very lazy weekend. This afternoon I woke up to find Phoenix on one side, Lola on the other, and hubby on her other side. My little family, all snuggled together.

Poor hubby is trying so damn hard to not get sick and he’s doing quite well. We’re flying out in a few days and I’m really not looking forward to being sick and having to fly up north. I don’t do well on flights as is, and having a stuffy head will only make it worse.

One thing I desperately need to do is boost my immune system. Mine has been horrible for many many years.

Dear body, please kick this nasty bug out now. Like, right now. NOW!

Favorite iPhone Apps

I’m just curious, what are some of your favorite iPhone apps? Preferably the free ones, but if a paid one really impresses you, let me know.

As you can see below, I’m a bit of an app fiend. To me, the greatest invention Apple gave us was being able to group apps! Seriously. In some of those boxes I have the maximum available number of apps. I tried really hard to only have a single box for a grouping. Then there’s the ones that aren’t grouped on my main screen that I use most often like the calendar, messages, StitchMinder (highly recommended for you fiber fans like me!), and Posterous. They’re kinda my 2nd row of home keys.

All in all, I have 110 apps, which includes the ones that came standard like mail, calendar, etc.

Wow… 110. That’s crazy!
